EASY BAKED CHEESE FONDUE
(Prep. 10 minutes. Bake: 5 minutes)
- 1, 8-ounce round Brie, Camembert
- Coarsely ground mixed peppercorns
- 2 tablespoons chopped pecans or walnuts
- Slice crusty bread, toasted, or crackers.
Directions: Preheat oven to 450F. Peel rind from top of the cheese. Place cheese in a quiche dish or shallow baking dish. Sprinkle with ground peppercorns and walnuts or pecans.
Bake for 5-8 minutes or until cheese is softened and just begins to melt. Serve with toasted bread slice or crackers.
Makes 8 servings.
PROSCIUTTO WITH MELON
(Prep: 10 minutes)
- ¼ lemon juice
- ½ cup olive oil
- 2-teaspoon honey
- ¼ teaspoon ground black pepper
- 1 cantaloupe peeled and cut into 1-inch wedges
- 10 ounces sliced prosciutto
- 1/3-cup fresh basil
Directions: In a small bowl whisk together the olive oil, lemon juice, honey, salt, and pepper. Set aside.
In the meantime wrap each cantaloupe slice with some of the prosciutto. Drizzle with vinaigrette and garnish with the fresh basil. Serve with toothpicks. Makes 16 servings
